I was challenged yesterday, to learn about Microcontrollers. I have not had any training whatsoever on how to use them. Was introduced to this forum by the guy who challenged me. So, here I am. Would appreciate all the help I can get, to navigate this learning curve.

It would be a bit easier to sugest where to start if you explain what level you are already at.
Latest test project, an LED matrix display made from one reel of addressable LEDs. here

I am right now going through the lessons from Gooligum Electronics, and also reading a text on C Programming for embedded systems. I've had some experience programming with C for general computers. So, I guess I am at the lowest level possible.

The Gooligum tutorials are good.
As far as I can see, you are starting with the correct foot.
If you don't grab some detail of a tutorial, ask, we will help.

This "helping spirit" makes this forum great. I'm also new here and want to learn everything! Will ask for help if necessary.
